To be filled in
Components
- 1 cup (tea) of goiabada cascão paste (approximately 350 g)
- 1 tablespoon of orange-flavored liqueur
Setup phase
- In a bowl, combine the goiabada and the liqueur, then whisk with a wire whisk until the mixture is smooth. Set aside.
Regarding the mass
Components
- 1 1/2 tea cups of wheat flour
- 100 g of frozen butter cut into cubes
- One-third of a tea cup of sugar
- One egg
- One egg yolk
- Half a teaspoon of baking powder
- flour from wheat to dust the countertop
Setup phase
- In a bowl, combine flour, sugar, and baking powder. Incorporate the cubed butter and blend with your fingertips until a thick mixture forms.
- Incorporate the egg and yolk, then knead until you achieve a smooth, soft dough. Shape it into a ball, cover with plastic wrap, and refrigerate for at least 30 minutes to firm up.
- Heat the oven to 180 °C (moderate temperature). Prepare a fluted mold with a removable base, measuring 28 cm in diameter.
- Using a spatula or knife, divide one-third of the dough and set it aside for the decoration. Lightly dust the countertop with wheat flour and roll out the remaining dough into a circle that is 2 cm wider than the diameter of the mold. Sprinkle flour underneath and on top of the dough throughout to prevent sticking to the surface or rolling pin.
- Roll the dough using the rolling pin and place it into the mold. Use your fingertips to softly press and cover the bottom and sides of the mold. Roll over the edge to trim any extra dough, then attach the trimmed dough pieces together.
- Using a spoon, evenly spread the goiabada filling across the bottom of the pie, creating a thin layer.
- Dust the countertop with additional wheat flour and roll out the remaining dough into a rectangular shape. Using a knife or a pastry wheel, cut 14 strips approximately 1 cm wide, ensuring they are long enough to span the pie.
- Create the lattice on the pie by placing 7 strips side by side horizontally, spacing them about 0.5 cm apart until the entire pie is covered; lift 4 alternating strips halfway up the pie and lay a new strip vertically, ensuring the new strips are perpendicular; then lower the lifted strips and begin weaving.
- Place it in the preheated oven and bake for approximately 30 minutes until it turns golden brown. Take it out of the oven and allow it to cool before removing it from the mold. Goiabada pie is a treat best enjoyed with fresh milk cream.
Do you want to speed up the preparation?
This pie dough should not be frozen as a whole, but the dough itself can be frozen. After making it, shape the dough into a ball and flatten it (this helps it thaw more quickly and makes it easier to handle when unwrapping), then wrap it in plastic wrap and place it in the freezer. The dough can be stored frozen for up to 3 months. Alternatively, you can prepare it, store it in the refrigerator, and use it within 3 days.
