Tonic gim scratch

Components
  • 2/3 cup (tea) of gim (160 ml)
  • 2 bottles of tonic water, each containing 350 ml
  • 1 cup of tea water
  • 1/2 cup of granulated sugar
  • Two Japanese cucumbers
Setup phase
  1. In a small saucepan, combine the sugar and water and heat over low to medium heat without stirring. Once the sugar has dissolved and the mixture starts to boil, lower the heat and let it cook for an additional 5 minutes to thicken into a crack syrup. Remove from heat and set aside. Meanwhile, get the cucumber water ready.
  1. Remove the cucumber peel and chop into large chunks. Place them in a bowl and blend thoroughly using a mixer (or a blender if you prefer). Pour the shredded cucumber, along with its liquid, into a fine mesh strainer over a bowl, and carefully scrape with a spoon without pressing to extract only the cucumber water.
  2. In a bowl containing cucumber water, combine the syrup, gin, and tonic water. Stir well and pour into a large baking dish (or heat-resistant dish) approximately 25 cm x 30 cm. Place it in the freezer and let it freeze for at least 8 hours (you can also prepare it the day before if you wish).
  3. When ready to serve, use a fork to scrape the entire frozen drink. Serve the scraped mixture in glasses or bowls using a spoon.
Keep in the freezer

If you like, scrape off all the frozen drink and put it back in the freezer. Have the mix prepared and ready for party time!

Validity period - 3 months
